Crispy Chicken Parmesan

3 medium-large skinless/boneless chicken breasts
Chicken Crust:
1 cup panko bread crumbs
1/2 cup regular bread crumbs
1/2 cup finely grated Parmesan cheese
1 tsp salt
1/2 tsp ground black pepper
1 1/2 tsp garlic powder
1 tsp onion powder
1 tsp ground paprika (optional)
1 tsp dried Italian seasoning

In a big shallow bowl, mix all the "Chicken Crust" ingredients and placed them aside.
In another bowl, beat the eggs and put them aside.
Preheat oven to 400 degrees F.
Put a large, deep skillet over above medium heat and add sufficient oil till it's about half full. Make sure the oil is heated when you begin cooking the chicken.
Fry the Chicken:
Take chicken cutlet separately, tap it dry with paper towels, and first of all dip it into the beaten eggs, shake to drain, and spin it into the bread crumbs mixture. Cover it very well in bread crumbs. Pass it to the pan with hot oil and fry on each side just golden-brown, it will take just 2-4 minutes per side.
Top each chicken cutlet with several tablespoons of tomato sauce, and 2 slices of Buffalo mozzarella cheese.
Bake for 10 minutes or till cheese is melted and the meat is cooked through.
Garnish with freshly chopped parsley and serve.
